ORANGE DRIZZLE CAKE

During these long summer days and mild evenings, there is nothing we enjoy more than indulging in a tasty treat or two. We have been baking up a storm at Edencoille and our favourite summer cake has to be the Orange Drizzle Cake. Its sweet and sticky, a delicious delight and we would love to share the recipe.

Ingredients:

Self-raising flour 225g

Caster Sugar 250g

Butter 225g

Sultanas 75g

4 Eggs

2 Oranges

Caster Sugar for topping 2 tablespoons

STEP 1

In a large mixing bowl add the eggs, sugar, butter and flour then mix well until the substance is smooth.

STEP 2

Grate the rind off the orange and then add into the mixing bowl with the sultanas. Stir gently, then pour into a baking tin lined with greaseproof paper.

STEP 3

Bake this in the oven for 25 – 30 minutes. Keep an eye out for a risen top to the cake that is golden and crisp to the touch.

STEP 4

Remove from the oven and then sprinkle the caster sugar over the top evenly. Juice the 2 oranges and pour the liquid over the top of the whole cake. Leave to cool for 15 minutes.

STEP 5

Cut yourself a generous slice and enjoy!!!!
